WINEMAKER’S NOTES

Weather conditions for Ontario wine regions in 2018 were extremely variable through all four seasons. The warm and sunny growing season resulted in early ripening which allowed an early and speedy harvest. The juice underwent fermentation on its skins for 14 days, using selected yeast. Oak barrel fermentation and aging in French and Hungarian briquettes for 12 months adds complexity to this rich red wine. The wine also underwent complete malolactic fermentation.

TASTING NOTES 

An elegant aged wine with a complexity of aromas, including plum, cherry and roses. On the palate reminiscent of chocolate covered strawberries with soft tannins and long lingering finish. Pair with roasted leg of lamb, ribeye, bone in with field mushrooms or strong cheeses like aged cheddar or blues.
