ERIC PEARSON'S WINEMAKER’S NOTES
After a year of weather plot twists, from fake spring to a stubborn summer heat wave, Ontario growers still brought in fruit with incredible flavour and balance. Early signs pointed to a vintage with the depth and energy we saw in the last three years, setting up 2025 to be another standout year for Ontario wine. Thanks to mostly dry conditions during harvest, we were able to pick on our own schedule – for optimum ripeness and preferred profile. Ripe fruit was crushed and fermented on the skins individually and then blended. This vintage is a blend of 24% Cabernet Sauvignon, 24% Cabernet Franc and 42% Merlot.
TASTING NOTES
This red wine has a bright cherry like hue with notes blackberry, raspberry and sour cherry on the nose.. Similar flavours flow through on the palate which are complemented by soft tannins and a long finish. Will pair well with flank steak, homemade burgers and grilled vegetables like peppers and mushrooms. Also a great match with weekday take-way dinner like a meat-lovers pizza, lasagna, or beef and broccoli.
