ERIC PEARSON WINEMAKER’S NOTES
After a year of weather plot twists, from fake spring to a stubborn summer heat wave, Ontario growers still brought in fruit with incredible flavour and balance. Early signs pointed to a vintage with the depth and energy we saw in the last three years, setting up 2025 to be another standout year for Ontario wine. Thanks to mostly dry conditions during harvest, we were able to pick on our own schedule – for optimum ripeness and preferred profile. The fermentation of this
wine lasted a typical 10 days and the wine underwent 100% malolactic conversion. It was aged in a mix of stainless steel and oak barriques. The final cuvée consisted of 75% stainless aged and 25% aged in French barriques for six months.
TASTING NOTES
This medium-bodied dry white wine offers aromas and flavours of baked apple and pineapple with hints of lemon with layered notes of butter and vanilla, due to some ageing in oak barrique. A versatile wine that will pair well with hot smoked salmon, grilled shrimp and freshwater fish like pickerel or perch, simply pan-fried or lightly battered. Roast or pan-seared chicken is another classic, especially with a cream sauce, lemon, or herbs.
