WINEMAKER’S NOTES
After a year of weather plot twists, from fake spring to a stubborn summer heat wave, Ontario growers still brought in fruit with incredible flavour and balance. Early signs pointed to a vintage with the depth and energy we saw in the last three years, setting up 2025 to be another standout year for Ontario wine. Thanks to mostly dry conditions during harvest, we were able to pick on our own schedule – for optimum ripeness and preferred profile. This wine was made in a more classic Pinot Grigio style, with no skin contact. Fermentation was completed in 10 days, and the wine was quickly removed from the lees to maintain a light, crisp mouthfeel.
TASTING NOTES
A classic, well-balanced Pinot Grigio with soft round flavours of cantaloupe melon and a pleasant minimality, with notes of apple on the nose. Naturally, it is an excellent match with prosciutto and melon, and of course, perfect with antipasti di mare and pasta primavera. Also pair with warm marinated green and black olives at the start of any meal!
